5. I worked a crew from New Orleans and Red Stick for a couple of

years, and we would fly crawfish, catfish, head cheese, oysters and other delicacies in that were only available from the area...

The flavor was incomparable with what is harvested in other areas...

We're all going to be a bit poorer for the lack of these things for a few years, I'll bet. We're all going to be even more poorer for the loss of all the wonderful people from that part of the world.

They made Cajun Cajun and god, it breaks my heart.
