Mmmmmmmm TACO PIE!!!!!!

Incredible Taco Pie
1 cup dry Taco TVP
1/2 cup chopped onion
1 can (4 oz) chopped green chilies
1 1/4 cup milk
3/4 cup Baking Mix (like Bisquick)
3 eggs
1 tomato
1 cup shredded cheese (Jack or Cheddar)
Sour cream

Preheat oven to 400 degrees. Reconstitute the Taco TVP by combining with 2 cups of water. Bring to a boil, add onions and let simmer for at least 2 minutes (until the water is absorbed). Using a 10 inch pie plate, spread onion and Taco TVP mix on the bottom. Top with green chilies.
Beat milk, baking mix and eggs until smooth (15 seconds in blender or 1 minute by hand). Pour into pie plate, bake 25 minutes or until golden brown.
Top with cheese and tomatoes and bake for another 8 to 10 minutes. Top with sour cream. Serves 6- 8.
