Like an omelette, but finished in the oven ....
Step 1) 2 TBS of Olive Oil, 1 of butter into oven safe skillet, obtain ANY filling material: onions, garlic, sausage, bacon, ham, mushrooms, tomatos, potatos, spinach, bell peppers, etc: in short: ANYTHING .... saute over medium heat....
Step 2) Beat enough eggs for those eating: 2 eggs per person .... add some milk or half and half or sour cream .... beat HARD to make sure air is folded into the mixture ....
Step 3) Saute ingredients in skillet from step one until wilted, half cooked or 'sweated', as appropriate ...
Step 4) preheat oven to 400 Degrees F
Step 5) when step 3 complete: add a little more butter, spread, and turn up pan heat .... listen for extra sizzle when heat increases, whisk eggs once more ,, then pour over contents in pan .....
Step 6) scrape bottom of pan as eggs first cook to make sure bottom is fully cooked ...
Step 7) add cheeses of ANY kind, especilly low fat mozz or feta, also scallions or chives .... then place skillet into oven ... set timer for 10 minutes ... (top will still be raw with eggs cooked at the edges ... )
Step 8) at 10 minutes: check to make sure eggs are cooked by toothpick method .... top will usuually be slighty browned by now .....
Step 9) remove when cooked, let sit for 4-5 minutes ... then slide whole 'pie' onto platter, cut pizza style .... serve with toast ...
Mmmmmm .. yum ... great way to use leftovers for breakfast ....
