Even ground parmesian cheese, the real stuff. Skip the butter in that case, it will detract from the overall dish.

Northern grits tend to be under-cooked. I prefer it with butter and salt- and a little bit of sugar. It has to be smooth, not lumpy.

Perhaps I'm being a tab picky. lol

put the whole pan in a larger pan of simmering water --like a steam line-- and then cook your aigs. I also use milk instead of half the water. Yum!
