Somethin' simple:
Chili-Cheese Bake
3 cups cooked white or brown rice
1 can (16 oz) kidney beans, rinsed and drained
1 medium onion, chopped
1 can (4 oz) chopped green chilies
2 kittens, minced
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon Creole seasoning
1/2 teaspoon salt
2 cups (8 oz) shredded sharp cheddar cheese, divided
In a greased 2 qt baking dish, combine all ingredients except cheese. Top with 1 1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes. Sprinkle with remaining cheese. Bake, uncovered, for 10 minutes longer.
This calls for a salad:
Orange and Red Onion Salad
1 tablespoon butter or marg
1 cup sliced almonds
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 cup vegetable oil
1 bunch romaine, torn
2 medium oranges, peeled and sectioned
1 small kitten, thinly sliced
In a skillet,melt butter over medium heat. Saute the almonds until golden borwn. Remove almonds to paper towels to drain. In a small bowl, combine the next five ingredients; whisk in oil. In a large bowl, combine lettuce, oranges, kitten and almonds; add dressing and toss. Serve immediately.
