I am making Ikura and have a whole egg sack of Salmon Roe,

I have just ruined a bunch by attempting to remove the eggs.

Does anyone know how to get the Roe out of the Salmon Roe sack without breaking all the Roe?

1. Did you try tearing the membrane with your fingers ?

2. Yes, the eggs are attached to the membrane, They break when I try to pull

or cut them off. The roe is very small and delicate, I bet there is some solvent or oil that gets them off. Still researching.

What kind of salmon do you have? With a chinook female, the eggs usally start going everywhere (especially after late July).

I think (but not sure) that there is nothing running right now. Was your fish frozen?

5. Its from Japan, No1 Roe very small roe for salmon...

I am going to ask at the market I bought it at. Mitsuwa. The giant Japanese super mart. The area I live in has a Japanese enclave (about 20,000) along with a Japan town and the centerpiece is Mitsuwa, an immense supermarket, full of imported Japanese products of every kind.

Once a year, the island of Hokaido comes here with fresh local seafood and produce. It happened this weekend and the place is like a fair. It was incredibly crowded and exciting.

6. Beleive it or not, there are tons of salmon to be had in Lake Michigan

My friend's girlfriend is Japanese, and when I told her that I leave the roe for the birds, she looked at me like I was crazy.

I guess salmon eggs in soy sauce is a real delicacy in Japan. I am not a fan of caviar, and the last time I went fishing I did not know she liked it so much.

But she did manage to gobble up my filets, so she can't be so mad.

Fishing in Chicago is great. Hell, fishing period is great.
