I eat the seeds, in fact I had a whole one with lunch today. My biggest problem is I can not stop eating them. I only planed to eat 1/4 but I ate the whole thing.

Do cut them in parts and them let them soak in water? It makes it really easy to separate the the rind and the seeds, and if you do it under water they never spray you. lol

My grandfather used to grow them in the backyard. I usually just get it open, then break it along soft rind thing and I just pull the seed out and eat them. I have also tried Pom juice. If you love them you will love Pom juice.
