The dutch have a messed up idea of what mexican should be . . . I would kill lots of people for a taco van burrito right about now.

But not really, I now live in Tucson, lots of good food. My recent period in Prague gives me empathy. I ordered a burrito and got something that looked like a folded over pizza with beans smeared on top.

"Tex-Mex" recipes & mixes here tend to call for flour tortillas in enchiladas. Thankfully, there's a place in Edinburgh that sells green chilis, decent corn tortillas, & other staples via mailorder. Then I can at least make my own chicken enchiladas. But oh, man, to walk into a restaurant and sit down to a table like that in the picture!! (drool)

I didn't know you were catholic. I went to catholic school when I was little, but I'm not a practicing catholic today. I would be what they call "spiritual not religious" :D
