Poll question: What is your favorite preparation of potatoes?

In honor of my diet where I may eat none of my favorite starch!

My favorites I left off as it was too painful - but I ...must....say....

These are two favorites in my family. The potatoes are peeled, cut into quarters and baked in a covered roasting pan with chicken parts and either sliced onions or crushed tomatoes. Both are great Winter dishes.

I like potatoes any way they are prepared. But I seldom eat them because of the starch. Occasionally, I will indulge.

I would quibble with calling potato chips a preparation of potatoes, particularly as you have left out Potatoes Anna, Hash Brown Potatoes, and simple Boiled Potatoes (think tiny new potatoes, served hot with butter and fresh parsley, or simple baked potatoes, with a choice of butter and/or sour cream, chopped chives, crisp bacon crumbles, etc.

Also quite worthy of consideration are Cheesy Twice-Baked Potatoes, Potato Gnocchi, Potato Soup, and Potato Skins.

By the way, you probably know how good potatoes are when roasted with a little olive oil and fresh rosemary. But did you know that sweet potatoes are a special treat when prepared the very same way? (Why do so many people think sweet potatoes must be prepared with a large amount of brown sugar and butter plus marshmallows on top? A good sweet potato is wonderful just baked and topped with butter, and some are so good they need only a touch of butter. Unfortunately, you rarely can buy them that good but must grow them yourself or get them from someone who does grow them.

Yum to all. Good luck with your diet, though! It is possible to be happy without potatoes, without chocolate, without anything we think we have to have, as long as we have other good, healthy food instead.

18. Just to be different

I love Indian-cooked potatoes.

There's one dish that's relatively easy, you take boiled potatoes and cut into 1 inch cube and fry in light vegetable oil with spices, such as red peppers, pepper, salt and cumin seeds. Garnish with cilantro at the end.

20. Why can't you eat a baked potato without all the fat on your

diet? Atkins diet? Or what?

I prefer the small red potatoes cooked in the microwave with some water and the peel on. I use "Take Control" margarine because it helps to control cholesterol and it's really got a better taste than most margarines to me.

I know you don't want to hear about a diet potato, but this is a good one.

Good luck with the diet. Dieting is a bummer...I know from many years of experience. But what needs to be done must be done.

29. really easy, really bad-for-you recipe....

cube potatoes -- it's better if they've been parboiled

cube raw chicken -- thighs are best

rough chop an onion

heat a little oil in large frying or saute pan, toss in the onions and some fresh sliced mushrooms, saute til mushrooms are about half cooked -- set aside

toss the chicken into the same pan, saute til about half cooked -- set aside

add a little more oil, toss in the potatoes with salt & pepper or seasoned pepper/salt and cook those suckers until they are good & brown & toasty

toss back in all the other ingredients and cook til the chicken is JUST done. it'll soften up the potatoes but not too much; most will still be toasty/crunchy

i like this dish w/ heated Heinz 57 on the side

It's really bad for you but it's really, really tasty.

That's my favorite way to eat potatoes.
