*****ZombyWoof's Crock O' Five Alarm Hellfire Chili!!*****

2 lbs. beef stew meat, browned in extra virgin olive oil at the bottom of the pot, set on high. This is for a 6-qt. crock pot.

Season the meat with black pepper, chili powder, paprika, and cumin. Stir while browning. Emphasize the pepper and chili powder over the latter two spices.

When browned, add the following, and yes, that means MORE hot chili powder and a bit of the other spices. Takes 7-8 hours on LOW.

1 white onion, chopped
1 green bell pepper, chopped and de-seeded
1 large bulb of garlic, minced and/or chopped
LOTS of chili powder, hot
Some cumin, maybe a 1:4 ratio with the chili powder
1 Habañero pepper, minced
3 Serrano peppers, sliced
1 Jalapeño pepper, sliced
2 15oz cans of tomatoes
2 15oz cans of tomato sauce
3 15oz cans of dark red kidney beans
Coarse-ground black pepper, lots
A few dashes of paprika

Serve as is, or with cheese, crackers, etc. Enjoy! :D

Or fancy supermarket, in the produce section. They are no bigger than a ping pong ball and a BRIGHT orange color! They are the world's hottest pepper, from the Yucatán Peninsula of Mexico. Also called "Scotch Bonnets".

Sometimes you can buy them in a jar, pickled. But try to find them fresh! :-)

You want real chili flavor? Add cumin in stiff dosages. All there is to it. Of course, quality, fresh chili powder.

Try taking all of the chili powder and cumin you are going to use in the recipe and heating them in some oil(like peanut oil, not olive oil.). Releases some very nice flavors.

Do not scorch the spices. Ick.

Adjust the recipe with your pot size! This filled my 6qt slow cooker to the rim, lol. I need to TONE it down... but I was able to feed 9! With seconds for most.
