2. It depends, here's how you can find out if they are bad

Fill a pot with water. Then put the eggs in water. If the eggs float, they are bad. If they sink, you are good.

Break your eggs into a small bowl rather than your recipe if you suspect they might be rotten. You'll smell it if they are. Salmonella shouldn't be an issue if you cook the cornbread thoroughly. Eggs last al long time even without refrigeration.

Keep in mind that eggs stay good unrefrigerated and with a chicken's butt warming them to a temperature of over 100 degrees F. for almost a month! If they're refrigerated, the dirty secret is that they pretty much stay good for an eternity.

Here is the trick. Crack each egg open into its own mug or bowl.

Believe you me, if the egg is bad, you will smell the sulphur.

If you aren't knocked out and forced to throw mug, egg, and all outside in the nearest dumpster...

8. I've observed the less fresh they are

then more the clear runny part gets a little cloudy and slightly jelled.

If the clear part is really clear and runny when you break it, the egg is good and fresh.

As long as the egg isn't smelly when I break it open, then I figure it's okay to eat. Thanks for your confirmation of that!

12. a couple of tips on eggs...

I've learned from a guy at work who sells me eggs ($2 a doz. still warm).

the fresher the egg the brighter yellow the yolk
the trick with the water (rotten eggs float, fresh eggs sink) works
for most recipes let the eggs get to room temp before you use them
fresh eggs don't break when you're making eggs over easy
if you suspect eggs at all just hard boil 'em and buy another dozen

and don't think about the fact that EVERYTHING that comes out of a chicken comes out the same way!
