go off about using sourdough and that got me to thinking about my wifes grandmothers Zwiebelplotz. Sourdough rye rolled out thin like a pizza; smothered in seasoned onions, sprinkled with pork fat renderings and baked in a wood fired oven. Going to Germany next month to visit the inlaws but sadly she passed away last summer.

to cover my bread with mayonnaise, then add Cheddar and Swiss, and toast it until the cheese begins to brown.

If I'm feeling adventurous, I put some thin sliced onion under the cheese first.
