Rate your hotness in Scoville Heat Units, the scale for measuring the hotness of CHILI PEPPERS. The greater the number of Scoville units, the hotter the pepper.

1. Notes for the top of the scale
Chemically pure Oleoresin Capsicum tests at 1,000,000 - 2,500,000 on Scoville's test. That's a pretty wide spread.

Food chemists are looking for a more objective scale, though. With a 250% variation in what people perceive as hot, Scoville's "organoleptic" taste test is useful but maddeningly imprecise. Alas!

6. I made some Habanero/Jalapeno/Datil chili last weekend.
So hot I had people crying. A wonderful thing.
