1. Well, jars of mayo don't need to be refrigerated until you've opened them.

They do.

But when you open it, you will be able to tell - immediately. Runny parts and discolored. Quite disgusting.

So don't hold it right over your sandwich.

I got one from a bin once that had turned a translucent tan :puke:

Must have been continuously recycled to the bottom during replacement with fresh packets.

4. Even if unopened, they still have a "shelf-life"...
... after which they become bad tasting... eventually they'll become rancid and inedible. (Just like any canned food.)

5. I'd at least shake it well.
The stuff may not have spoiled but it could have settled. I'd give it the smell test too in your situation


Personally, I cling to the original sin and total depravity concept of mayo, in which all mayonaisse is inherently tainted and corrupt by its very nature.
