The bestest cookies ever!
No Bake Chocolate Peanut Butter Oatmeal Cookies
These candy-like cookies are easy to make and delicious. If you want to indulge in something sinfully sweet but don't have the time to make something fancy, this quick and easy recipe is sure to hit the spot. Plus, there's the added bonus that because you're using your choice of ingredients, you'll be avoiding those nasty preservatives found in store-bought snacks.
Ingredients:
2 tablespoons butter
1/4 cup cocoa
1/2 cup sugar (I use cane sugar)
1/4 cup milk* (I sometimes use condensed or whole milk)
dash sea salt
1 teaspoon pure vanilla
1 heaping tablespoon peanut butter (optional: add more to taste and increase the oatmeal)
1 1/2 cups UNCOOKED oatmeal

Microwave the butter in a microwave-safe bowl for 15-30 seconds, until the butter is melted. Add 1/4 cup cocoa and blend until the cocoa is dissolved into the butter.

Add the sugar, milk and salt. Blend well.

Microwave on high for 1 minute 10 seconds to bring to a full boil. (Should you need to microwave the batter some more, do so in 10 second increments.) You want a full boil, but because it will continue to cook for awhile once it's removed from the microwave, heating it too long can cause the mixture to scorch.)

Add the vanilla, peanut butter, and oatmeal. Stir well. Drop by tablespoonful on waxed paper and allow to cool.

Makes 12 cookies.

1. I make them on top of the stove.
It was my kids favorite. They will still call and get the recipe because their wives can't seem to keep it.

3. I agree that these No Bake Cookies are the best
But I must take issue with using the microwave.

1/2 cup milk
1 1/2 cup sugar
3 Tbl. cocoa

Combine milk, sugar and cocoa in a sauce pan. Bring to a boil while stirring and cook for 1 full minute after it starts to boil. Remove from heat and add:

1/2 cup crunchy peanut butter
1 t vanilla
2-3 cups oats, depending on taste.

Stir well and drop on wax paper. Cool for about 30 minutes.

They are the bestest in the Westest, for sure!

5. I use walnut or pecan flavoring instead of vanilla,
forget the peanut butter, add raisins instead.

10. I make mine on the stove top and sometimes add choco chips
with the oats. My recipe is much larger than yours, makes a 9x13 pan. I'm too lazy to drop the cookies and making the bars is easier.

I'm going to keep your recipe handy..that way I can make them and not be tempted by a pan full.
