How to make a tender and chewy Smalahove
1. Put the heads in to the frying pan with cold water over them.
2. Cook up the heads, and let them cook for a couple of minutes. After that, you pour out the water.
3. Now you fill the pot with cold water again, and cook onc more time. Then you let the heads cook for at least 2 1/2 hour. When the meat releases from the jawbone it's cooked.

The extras with smalahove are of very big importance. Smalahove is a powerful food, and is not good with wine. ToSmalahove you drink beer and aquavitt
