Beets are one of the few foods that I detest. I think goes back to my childhood; I was served pickled beets, but I wanted no part of them. I protested throughout most of the meal until my father glared at me and said - without moving his lips - 'just eat the goddam beets!' Having seen that satanic ventriloquist act before, I knew the smart money was on 'eat the goddam beets.' I repaid the demand with vomit all over the kitchen, however.

Too bad you're not Estonian. You might have developed a tolerance for beets. We make a nifty pink potato and egg salad with beets, called rossolje. It's also got chopped up apples, herring, pickles and I forget what else. I know it sounds peculiar, but it's good.

That dish sounds just peculiar enough to try. I may be over my aversion to beets by now. I recall that my younger brother had a similar problem with green beans. He'd sooner eat a june bug than a green bean, but now he loves them.

15. Recipe for rosolje salad
This makes a lot, so you might want to reduce the proportions

Can of sliced beets - 15 oz.
6 boiled, peeled potatos
4 dill pickles
2 apples (tart ones)
2 hard-boiled eggs
1 small jar of herring in sour cream, including the onions

Mince everything into small cubes no more than 1/4 inch in size. The finer the cubes, the more impressive the result. Put it all in a bowl.

Mix 1 cup sour cream and 1/2 cup mayonnaise into the vegetable mixture. Add more if it's too dry. Salt and pepper to taste.

This is often served as part of a smorgasbord table. Estonians often add a couple of cups of minced bologna or roast beef to the salad, but I don't like it that way.
