9. Japanese horticulture people have developed a sweet kumquat,
where you eat the skin and all, just like the regular kind, but it is sweet all the way through, with a little tangy flavor of kumquat. They also developed an everbearing limequat: tiny little limes, shaped like the amazing kumquat, but green. They are cold -hardy down to 25 degrees or 18 degrees or something. An amazing tree. I am starting an orchard. Have a sweet, a regular-kind, a round kind, 2 limequats, and plan to get another sweet one. Any dish that calls for oranges, can substitute kumquats. I freeze them, and use in cooking and in drinks. Make kumquat-cranberry relish at holiday time, kumquat marmalade, kumquat-mint-tupelo honey sauce for lamb. Duck a la kumquat. Endless variations.
