asking for a recipe here, till I saw the Nacho post. does anyone have a recipe for "Oysters Herman"? It was a popular party dish in the Houston, Texas area about 30 years ago.

12. You're eating it wrong

Okra isn't supposed to be slippery (unless it's in gumbo). What you do is cut it up, roll the slices in corn meal, and deep fry it. Yummmmmmmmmm..........*drool* and not the least bit slimy.

I'm sorry, okra does not ring my bell in any way, although fried is edible. If you surround it with gummbo, it can be swallowed. sorta like surrounding broccoli with cheese. I much prefer a straight file gumbo, though, to one with okra in it.

I'm telling ya - rolled in a little corn meal and deep fried (the way my momma cooks it) Okra will bring you to your knees.

Lemme put it like this. I spent a while as a salad chef in a restaurant as a teenager. I hate cutting up vegetables. Not only will I cut up okra without bitching, I'll do it without being asked if it means my momma will fry some up for me. :-)

...in a cast iron skillet! I swear you could roll just about anything in corn meal and dee fry it in a cast iron skillet and it will taste good. Toss on a little Louisiana Hot Sauce, too! :9

This is a challenge.
I'm gonna see if I can come up with a marinated, grilled okra recipe that tastes good. If it works for eggplant and zuchini it oughta work for okra.

of some sort, and was similar in taste to Oysters Bienville, if I remember correctly. It was named after a prominent HOuston family.

Great oysters there! Herman died a few years ago. His wife never did get him to quit smoking. Quite a local character. I don't think she kept the business.
