Tabasco (pretty hot) & Pickapeppa (not so hot) are two good ones but there's lots more.

13. I Usually Buy Crystal
out of an impression of it's being more down home Southern than Tabasco (which is a might fine hot sauce).

I have to resort to California Tortilla to get a good sampling. Lots of different flavors, many of them good, but I haven't had any that would replace Crystal or Tabasco.

56. This stuff is mild unless you use alot of it, then it gets pretty strong.
I think it adds some interesting flavors to corn, egg, and some meat dishes. I don't care for the "Hot" one they sell. I wish I knew of a way you could sample it.

Although for some reason, people tend to get a very wary look when you tell them this one.

My SIL brought some pele pele from the Congo that was ever so potent. We made some amazing guacamole with it years ago in Boston.

And it's always fun to watch Mrs R. take on those macho "I can eat pure battery acid" type of guys at the Mexican place where we eat lunch a couple of times a week.

A friend of his made it. It was the hottest and most flavorfull hot sauce that I've ever had. It was so hot, literally two or three drops was plenty.

When my uncle handed it to me he said "be very careful and don't drop it, it could explode."

Dave's Insanity Sauce checks in at 80,000 Scoville units. They have stuff in the 1,000,000 - 6,000,000 Scoville unit range (which will really injure or even kill you if you don't dilute it). To put it in perspective with Tabasco sauce, that ranges from 600 Scoville units for the Green Pepper sauce to 8000 Scoville units for their Habanero pepper sauce.

I remember fondly the day I put a few drops of Dave's Insanity sauce in a 3 quart pot of my spouse's chili. That stuff was almost inedible for him, but I loved it.

I think the high heat stuff would be good as animal repellent. Pit bulls watch out!

It's the ground peppers left in the bottom of the barrel after the sauce is poured off. Right now, the only place you can get it is at the factory in New Iberia/Avery Island. It is fantastic sprinkled on food.

And, since my stomach has been acting up, none. When it calms down again, I'm a huge fan of--don't know if anyone has heard of this, but: "Ass In Space." That's a fun, ultra-spicy sauce that's best for me on tasteless tofu/garden burger things. All organic, super tasty.
