No flames except the charcoal grill: Pork Chops DemoTex.
OMG! I just finished them. Quelles grandes côtelettes de porc! My original recipe:

Ingredients:
Fresh ginger root
Rice wine vinegar
Toasted sesame oil
peanut oil
Lite soy sauce (because the chops will already be brined)
Black pepper
Kosher salt
Lump charcoal
1"-thick center cut loin pork chops

1. Start with two 1" bone-in center-cut loin chops (you will have to extrapolate for more).

2. Boil about three cups of water and add 1/2 cup of Kosher salt to dissolve thoroughly. Pour in metal bowl and add a large cup of ice to cool the solution down. Add about 6 oz of rice vinegar (flavored is OK).

3. Peel and cube a section of ginger root and either grate or press through a garlic press into the solution. Stir.

4. Add the pork chops to the solution and weight them down (coffee mug works). Add ice as ice melts. With this ratio of NaCl to H2O I get excellent results with a short marinade (< 2 hours). The baste will have salty soy sauce.

5. The baste: 1 part rice wine vinegar. 2 parts lite soy sauce. Splash of toasted sesame oil. 3 parts canola or peanut oil. Hint of fresh garlic (to taste).

6. The deal: Wipe the marinated chops and season with pepper (NO SALT!). Slap the chops on a low coal fire, baste, and cover. Cook for about 7 minutes. Turn the chops, baste again, and let cook for another 7 minutes. Then un-cover and turn-and-baste every minute or so until the chops are brown or the basting sauce is used up.

7. Enjoy with fresh boiled corn, okra&tomatoes with chow-chow sauce, and a cheap Australian Shiraz.

6. Star dog ... Dog star.
Sirius is Greek for the Dog Star. Canicula is Latin for the Dog Star. Sirius, my old sick dog, is from the accepted term for the DogStar. My other dog is Canicula - Nick-Nick - whose name comes from the Latin for the same star.

5. I use a similar recipe for chops.
