Tomato salad ideas?
It's waaaay too hot to cook in the kitchen, so I'm looking to fix some sort of tomato based veggie salad for dinner. Caprese salad with a baguette sounds like a pretty good summer meal, but it'd be nice to jazz it up a bit. Anyone got any ideas?

(I'm gonna be away for a little while, and will be pissed if I come back here to find a flame war, so everybody behave. :) )

boil some pasta..add some oil...toss....

2. Beefsteak tomatoes sliced
with thinly sliced purple onion, topped with gorgonzola cheese, and a few dashes of balsamic vinegar! YUMMM!

5. We do that, but add thinly sliced cucumbers, too...

6. Tomato Concasse:
Boil 5-6 roma tomatoes, cored, for 10 minutes or until skin becomes loose.

Remove skin, let cool.

Once cool, slice in half, lengthwise, and cut the skin of the toamto off from the "meat." Take the skin and cut it into strips, then dice into small cubes 1/8th of an inch in length.

Place in large mixing bowl.

Mince 2 cloves garlic, 2 shallots, 1 tbsp parsley, 1 tbsp tarragon (fresh) and 1 tsp mint (fresh).

Add these to the tomato cubes.

Season with salt and pepper, and ad to any bed of greens you got handy.

VOYLAH!

Sliced tomatoes, sliced mozzarella, chopped basil leaves, slat, cracked pepper, vinaigrette. It's cliche, but exquisite.

8. must be ~fresh~ mozzarella
and I like to add a drizzle of honey enhanced with passionfruit over the salad.


Alternately, - gazpacho is pretty tastey in hot weather, too.

10. Panzanella
Better with day old Italian bread, but it works OK with fresh

Bread, crust removed and diced into 1/2 to 1 " cubes (4 cups)
Tomatoes, cored, and diced to same size as bread cubes (2 cups)*
1/2 cup diced red onion
3 tabls olive oil
1.5 tabls red wine vinegar
Fresh basil or arugula leaves, shredded.
Salt and pepper

Whisk the oil,vinegar, salt and pepper together, mix in the red onion, then the bread, thoroughly mixing, and finally fold in the tomatoes and basil/arugula. Let stand 15 minutes.

* if the tomatoes are really soft, seed them.

12. Here's one
Toast several small CHUNKS of baguette in toaster oven or oven for 15 minutes to make real croutons.
Cut up pieces of tomato in about 1/2 inch pieces.
add slivers of parmesan
rip pieces of basil into salad
coat all ingredients with olive oil

then crush or chop 2 cloves of garlic into salad and drizzle with balsamic vinegar. let chill for 3o minutes so that garlic permeates the salad
