Misunderestimator will be having traditional brisket with carrots and potatos and a tomato/ roasted anaheim chili salad with garlic lemon vinaigrette!

5. Mushroom Risotto.

8. The world's best potato salad,

and the world's best potato salad with beets,
and fresh corn on the cob.

Mom's potato salad

Boil 7 or 8 white potatoes in their skins until a fork goes in easily, about 45 minutes. Let cool and peel and cut into 1/2 inch cubes.

Hard boil 1 or 2 eggs, peel, and chop finely. Add to potatoes.

Thinly slice 2 or 3 scallions including the green tops; add to potatoes

Slice 1 or 2 ribs of celery into thin slices; add.

Add 1/2 cup of light Hellman's mayonnaise and 1/2 cup of reduced-fat Breakstone's sour cream, and mix into potatoes until evenly distributed. Add more if the salad looks too dry.

Add salt and pepper to taste, chill if you want, or dig right in.

(optional: boil, peel, chop and add 2 or 3 beets)


This is the way my mom made it, except there was no reduced-fat mayo or sour cream when I was a kid.

Very light dinner. I had a hot dog for lunch. Yuck.

14. We ate beef and cheese enchiladas.

I made them today. The rice was from an envelop by Knorr's. I skipped the beans. I'm tired of losing my A/C in 100 temps because I have to open the windows for the kids' toots.
