Cooking Fresh Striped Bass- Thick Fillets... How To Cook?
hey, my Dad brought home some thick fillets of bass.

Can I put em in the oven wrapped in foil with some lemon & some butter and some herbs?

Afraid to just broil cause they're on the thick side.

1. skillet
bass

a little oil or butter

roughly chop some onions and peppers

soy sauce

ginger

tarragon (or other aromatic herb--dill is good too)

cover tightly

10 - 14 minutes on medium heat

medium thick fillets take me 10 - 12 minutes. You might check after 10 or so.

3. Your idea is fine....
You can broil them, as long as you keep the surface toward the broiler moist (a marinade brushed on frequently, etc.).

Actually, thicker is better than thinner for broiling, because a thin fillet will dry out really, really quickly on the grill or under the broiler.

If you're not sure about how to manage fast cooking of fish, wrap in foil as you've described--you'll probably have better results. You won't want fresh fish burned up and dried out. :)

4. I like slicing mine thin...
rolling them in cornflower ( season cornflower with cajun seasoning)
and frying them. ten minutes from start to finish.

5. another one... seems simple..
Grilled Striped Bass
4 pound striped sea bass
1 lemon, zest and juice
¼ cup fresh dill, minced
Kosher salt and freshly ground black pepper
¼ cup canola oil
Rinse fish inside and out and pat dry. Rub oil on inside and outside of fish. Liberally sprinkle fish inside and out with a mixture of lemon zest, fresh dill, salt and pepper. Place on medium grill for 4 minutes on each side plus 1 minute for every inch of thickness. Fish is done when it is no longer translucent and flakes with a fork. Do not over cook, it will be dry.
Baked stripper

* 1/2 fillet of strip bass
* Progresso Seasoned bread crumbs, about 1 cup for a large fillet
* 4-5 Tablespoons of minced garlic
* Olive Oil
* lemon
* salt and pepper
* 1/2 cup minced fresh parsley

Oven: 400 degrees
Wash the fillet with fresh water. Pat dry with a paper towel. Oil a flat baking pan with Olive Oil, lay the fish down flat and oil the top. Sprinkle the minced garlic,bread crumbs,salt and pepper over the top. Cover with aluminum foil. Bake at 400 degrees for about 30-45 minutes. Sprinkle lemon juice over the top and minced parsley.
