My friend John, down the street, called last night. "Wanna buy some shrimp? Right off the boat?" "How much?" "Three bucks a pound." Whoa! We normally pay $6-$8 a pound for large to extra-large. "I'll take 10 pounds. No...make it 20." "I got 20 pounds yesterday. They're nice. White shrimp, heads on, about 25-30 count. (25-30 to a pound) Mostly large to extra-large. Some jumbos and a few gumbo size (small)."
The guy who is rebuilding John's dock (Hurricane Ivan) is a shrimper by night. Usually gets around 600 pounds. He said that if John could get enough folks together to buy straight from his boat, in 10 lb. lots, he could make a little more money and we could save a lot. I know the shrimpers are feeling the fuel price hikes just like all of us.
Anyway...John dropped off a cooler full of shrimp a couple of hours ago. Miz t. and I set to work heading and sorting them. Took about an hour. All the heads are now simmering in a big pot with a handful of Old Bay Crab/Shrimp Boil and a healthy sprinkling of ground chipotle pepper. Make great stock for gumbo, shrimp bisque, etc.
We'll freeze all but enough for Shrimp de Jonge tonight. Tons of garlic. Come on over. ;-)
