and maybe some hush puppies, and Cole Slaw... And maybe some corn on the cob?

7. That's some really good eating...
.... and I cook it every month or so.

With my catfish, tossed in corn meal and fried up just right - I like fried okra (fried until it is getting brown and crispy, fantastic!) and my simple tartar sauce made from onions, pickles, mayonaise and lemon juice.

I can taste it right now :)

14. People think.....
.... they don't like okra because they've either made the mistake of eating it boiled, or fried at a restaurant where in reality it has been "breaded" (yuk to the max) and frozen and then fried.

You wouldn't eat a boiled steak but somehow folks think that eating totally mis-prepared okra has given them an accurate impression of the potential of this venerable vegetable.

Eat some properly prepared okra and trust me on this - you'll change your tune!

15. Try it pickled too.
My grandmother used to do them and put some Jalapeno seeds in the jar so they had a spice to them.

... we pickled a batch last summer. It came out a bit salty, but I'm eating it anyway! Yes, pickled okra are good, especially with lots of hot peppers to spice it up!

Here's the intro to an article I did for a Cleveland Mag about Nashville....



On the outside of the restaurant, a giant wooden catfish, frozen in mid jump, is stationed smack in the middle of a dark pool of water. Inside, away from the fierce creature, is a large sign proclaiming to all true believers that devotion, verified by a Sunday Bulletin, was worth 10% off the daily catch at Uncle Bud's Cat Fish 'n Such. The menu was simple, the eatin' was borderline communal, the decoration was old John Deere hats hanging from everywhere. The selection is deep fried alligator tails, that "tastes just like chickin'" with, of course, chickin, catfish and oysters. Pickles, slabs of onions and hush puppies (they go with everything) were set down family style by one of the scurrin' waitresses before you even ordered. This oasis of ante-bellum haute cuisine was surrounded on all fours by asphalt. And every night the expansive lot was packed with pick-up trucks, dirty jeeps and banged up vans. Welcome to the deep south of Nashville.


Not fifteen minutes from the land of Dixie, close to the safe environs of Vanderbuilt University, is a small but growing gentrified area. This part of Tennessee has left behind the soulful longings for country music, bass fishin' and beer drinkin' of a Hank Willimams Jr. and embraced with gusto the world of angst ridden folk singers, hackey sack and Latte represented by Gen X warbler Tori Amos. The Bistro's around this neighborhood serve up Nuevo American Cuisine with the same panache as the restaurants that populate Tremont, Ohio City or the Warehouse District. All the pick-up trucks, jeeps and vans are clean. Welcome to Confederate Flag free Nashville.

30. I know some folks who agree with you completely...
They used to love shrimp... Now, won't touch it.

or crab...

or anything...

But, especially fresh water fish.

Probably taste something in it I don't.

taste like they smell... Fishy! Yuck! I've tried fish every which way it can be made, and still yuck!!! Oh well, maybe one day I'll acquire a taste.

Tartar sauce, ranch dressing, cocktail sauce or malt vinegar are the
usual dips of choice.

But, I suppose if you have a Maple nearby syrup might
be good.

The ones I make are a mixture of corn meal, onions, celery, pepper, maybe some cheese and corn. Roll them into balls, drop them into the fryer and when the outside gets crispy brown (inside golden yellow), they are done. They are fine by themselves. If you dip them in anything, it would be ketchup or tartar sauce.

You can by an already made mixture add water and go.

I miss my granny's hush puppies. Man they were ugly, with big ol' hunks of sweet onion hanging out the sides, but they were the best ever.
