Moog has a theramin kit, i believe.

My friend made on out of an old ghetto blaster and parts from Radio Shack.

The Good Vibrations instrument was an actual theramin on the recording. When the song was performed live, Mike Love used an instrument that had the same oscillators as a theramin, but was easier to pitch. It used something akin to controller "ribbons" on modern synthesizers.

And just for those who may not know, a true theremin involves coils and radio frequency interaction. There are also photo-electric theramins that are just an oscillator controlled by a photocell.

Oh, and there was not a theremin on Good Vibrations. It was actually Paul Tanner's electro-theramin which used a slider interface for more precise pitch control.
