I was managing the kitchen of a small restaurant, the owner had hired on an older (late 50's?) Jamaican woman who had just arrived from the island with ambitions to open her own place. We knew her as "Mother of Negrille". She had the most joyous disposition. Anyone would be lucky to meet such a sweet, lovely person ONCE in their lives. I was fortunate to know her for about a month... so anyways-
We also had a teenager working for us we called "the Kid" (a term of affection, really). The Kid was a "metal head", he was a great guy but he had issues. So it's after lunch one day that I asked the Kid to peel crawfish tails (we served cajun food)- crawfish shells are hard and sharp and yield little meat for the effort- it's shit work, and Mother to prep two five-gallon buckets of salad mix for the Thursday night ahead, and went into the empty dining room to do the ordering for the weekend. The ordering took about 45 minutes.
When I came back into the kitchen Mother was peeling crawfish and her fingers were just about BLEEDING and the Kid was out back smoking cigarettes. I went ballistic! Visibly upset, I was yelling at the Kid for passing off HIS work, taking advantage of this kind, gentle person- "she wasn't hired to peel crawfish- YOU were hired to peel crawfish!". All the while Mother just sat there peeling away. Seeing how upset I was, Mother looked up with her beautiful smile and said-
"Dominic, Dominic- There's no good work and there's no bad work- there's just work!"
Stopped me dead in my tracks. It is an aphorism I carry with me to this day. THAT is my work ethic.
