Cooking question

Does anyone out there have a really good recipe for fish and chips? I am a pretty good cook, but have never been happy with the fish and chips I make at home so I am seeking wisdom from fellow DUers.

1. I prefer to use Panko to make breaded fish and chips

Panko is Japanese Bread Crumbs, I think it is a product from rice. I prefer Panko cause it gives a nice light breading to fish instead of the usual beer batter which you get more batter then fish.

2. look for a substance called "mel fry"

it's a powdered mix of flour and some other stuff.

Dip fish in condensed milk, then into the mel fry

place fish in deep fryer slowly (or deep pan with lots of boiling oil (flick water in off your fingertips. if it spurts, it's hot enough)

Wait for fish to float.

remove from oil, drain on paper bag, eat.
