What's for dinner?

My daughter and I ate at church. Tonight was fish and quiche night, with a number of different salads to choose from, some fruit, angel food cake w/ cherries and iced tea to drink.

Next week is even better-fried chicken, collard greens, cold water cornbread, rice and tomato gravy. I've already signed us up!

It's kind of a favorite in the colder rainy months.

You saute some garlic and sage in olive oil, then add some tomatoes (I'm using canned tonight) and simmer them down for about 20 minutes, then you toss in some cannelini beans (and if you can't find those, great northern beans or others will do) and let that go for another 20 minutes.

I got a couple hot italian chicken sausages and a small loaf of sourdough to go with that, but pasta is also an option.

I doubt we'll eat it all.

I'd better go clean up the kitchen in a minute and start cooking.

It's an easy meal to make, but I'm feeling way over on the lazy side right about now.

16. You could make an omelette

w/ the egg and sausage and serve it over the croissant. If you had cheese I'd say turn it into a bake-tear up the croissants, mix your eggs, pour over croissants and sausage, add some potatoes and cheese and bake until eggs are set.

I'm an omelette freak.

You could take the sausage, remove the casings (if it's links),shred some potatoes into a pie plate, place the sausage on top, and then tear up the croissants (dip them in melted butter and maybe some garlic or parmesan or a hard cheese) and place on top, then cook until sausage is cooked through.

That would be enough food for a couple of days right there.

11. Well, tonight I'm going to cook!

I have a fair amount of left-over pork loin roast. I will make about 2 cups of gravy from some broth and butter and flour. Then I slice up an onion and cook it in the gravy till the onion is cooked, and the gravy is thickened. Then I slice up the pork and drop it into the gravy, and heat the whole mess up. I need to make some rice to put it onto, plus a green veg of some sort...

It is a bit tedious, but it makes a lot of food ...It will feed us for a couple of dinners and at least one lunch. And it is yummy!

I also use this same recipe for beef, and chicken. We call it "onion delight with"...whatever meat I'm using.

except I bake mine as a casserole and serve the gravy over top. I add a veggie to the casserole itself too so that cleanup is even easier on me.

39. okay, here's the list

I grind my own beef, so start there with a 15/85 fat to lean ratio. (commercial ground round works, too.)
Grind a medium red onion to 2 pounds of beef. (You can use turkey, but you need to add fat - turkey is too dry.) Mix it in well.

Add to taste: oregano, basil, rosemary, Greek seasoning (it's a spice blend), mint, salt, pepper, paprika, minced garlic, a little olive oil, a little soy sauce. Quantities are approximately tablespoons, but light on the salt. If you can find it to add, sumac (an armenian spice) is a good addition, but if you can't find it, you'll be okay without it. I add about a half-tablespoon of sumac.

Grill, if the weather allows, or fry or bake.

Serve with cucumber tzaziki (or however it's spelled) made from a drained cup of yogurt, 2 tablespoons finely minced onion (use a food processor to get a paste) a teaspoon of garlic paste (commercial or process with the onions) and a half cup finely minced cucumber, minus the seeds (or use English cuke.)
