Excellent Ginger Soy Vinaigrette |
|
1 ginger root (peeled) and chopped very fine
2 tablespoons finely chopped garlic
5 tablespoons ground black peppercorns
½ cup Tabasco
2 cups Japanese rice vinegar
¾ cups soy sauce
3/4 cup pure sesame oil
1/4 cup Toasted sesame oil
3 cups vegetable oil
(makes about ½ gallon)
Cut to scale for smaller portions.

But that is a restaurant's recipe for a daily 1/2 gallon. I just reduce the quantities proportionally.
