Red Beans & Rice - Anyone have a recipe?
I want to try this dish. I've never eaten it. Heck, I've never even seen it in person. Help a Canuck out.

1. here you go!
1 pound dried red beans cleaned and soaked over night.
lots of water
1/2 - 1 pound lean salt pork, bacon, or ham diced or cubed
I suggest 1-2 smoked ham hocks depending on size.
1-2 tablespoons oil (olive oil)
1 cup chopped onion
1-2 clove garlic minced
2 tablespoons fresh parsley
1-2 teaspoons some kind of red pepper hot sauce like Franks Red Hot or Tabasco
Salt to taste after cooking cause ham is salty.
4 cups cooked rice.

After soaking beans rinse and cover with water and bring to a simmer along with the ham hacks. Saute' the onion and garlic for just a couple of minutes and add to the beans along with the parsley.
cook for a couple of hours. (add hot water as need to keep beans covered during cooking.)Beans are done when tender and most of the liquid has been soaked up. Serve over hot cooked rice.
Enjoy.

13. The type of bean is VERY important
Do not confuse kidney beans for red beans; they are not the same.

Goya red beans are good, or look for "rojos de seda" (red silk beans). With the right kind of bean, you won't be disappointed.

14. using a ham hock is also very important. The marrow from th
ham bone adds a wonderful flavor to the dish. I have made them with just chunks of ham and also with hot sausage. NOT THE SAME. Good, but not the same.

My recipe is pretty much like this one and adds a cup of chopped scallions to the whole thing about 1/2 hour before serving. Adds a very nice layering to the cooked onion that is already in the dish.


Love those red beans and rice.

next to Uncle Ben's. Zatarain's boxed rices are pretty darn good. We like the black beans and rice with added shrimp and sliced up smoked sausage from the deli. mmmmmm

6. Here's my easy recipe
3 cans of red beans
one chopped onion
1 can of Rotel
1 tsp of chopped garlic
Luzianne cajun seasoning to taste
If you cant find andouille sausage, use a summer sausage.
Either slice it into the beans, or prepare it in a black skillet

The longer you cook it the better it taste. Serve over a bed of rice.

11. Easy red beans & rice packet out there.
Doesn't take all day to make, just follow the directions, put the sliced sausage in with the rest and you have a yummmy dinner. :)
