I just finished off the spicy tofu and veggies with rice which I've been gnawing on for two days.

49. Like anything, tofu can be awful if prepared wrong
I like it spicy too. This local company makes it already steamed & spicy - I just cut it up & put it in with some veggies - voila, dinner is served. :9

16. Chicken and couscous leftovers from last night
Last night, I marinated boneless, skinless chicken breasts with soy sauce, dijon mustard, minced garlic and olive oil. I saw Ina Garten do it the other day with grilled salmon and decided to try it with chicken. It was delish! I just put it in the oven at 400 for 45 mins. Served it with couscous.

Tonight I made a rice bowl of sorts with the leftovers and tossed it with some baby spinach.

* 1/4 cup vegetable oil
* 3 tablespoons rice vinegar

54. I have had a particularly difficult couple of days, so I took the easy way
tonight - we had pizza.

I had planned on making broiled hamburgers, beans, fruit salad, and apple crisp, but I have shelved those plans until tomorrow.

76. Never had the Boca chicken but I find the boca burger to have a strong
taste that overpowers... and I dont like the fake "grilled" marks on it. I wish I had the time to make my own veggie burgers. Thee's a burger by a Dr. something or other from NJ that is particularly awesome. This is a a cool thread. I'm getting some good ideas.

A nice pastrami sandwhich with alpine lace swiss cheese. It also had some mayo, hot mustard sprouts, onions and lettuce and I had it on a garloc roll. I also had a dill pickle with it, some chips, and and a coca cola. Damn I want another one.

Soy cheese, lettuce, tomatoes, mild and hot banana peppers, mushrooms and crushed red cherry peppers on a tortilla. I had some olives on the side and a banana for desert.
