Just something about a steak served simply that perks up my palate. Not to say that your suggestions don't sound good, especially considering that the filet mignon tends to lack in beefy flavor what it brings in lean tenderness.

I'm more of a ribeye man, myself; and with such a flavorful cut, I'd hate to see the steak overshadowed by the sides.

Oooh... now I'm thinking of a côte du boeuf with potatoes au gratin and steamed white asparagus.

The wine is, of course, non negotiable (though I suppose Leoville could sub for the Haut-Brion).
