One of our favorite chain restaurants is Bertucci's Brick Oven Pizzeria.
They make the most wonderful sausage soup.
I made an attempt at it on Friday night. I think I did pretty well.
sweet italian sausage (I used 4 patties all chopped up) olive oil one onion
and I browned all that in the soup pot
then I added 2 cartons beef stock 1/2 small can of diced tomatoes (drained) 3 handfuls frozen cut leaf spinach 1 tsp. dried basil 1 handful chopped parsley bay leaf cooked rice (1 cup water, 1/2 cup rice--cooked)
When I served it, I sprinkled some shreaded italian blend cheese.
YUMMY!
