Which of these would take longer?
Counting every single grain of sand on every single beach in the world, including all the sand at the bottom of the ocean and defining sand as "particles or granules ranging in size from 0.0625 to 2 millimeters." composed of silica, limestone, sandstone, magnetite, chlorite, glauconite, or gypsum -OR- counting every single blade of grass including every single member of the family Gramineae or Poaceae also known as the "true grasses" on the planet, blade being defined as a linear, parallel-veined leaf.

6. Sand is tinier, and there's probably less greenery than there used to be.
I'm going with "Sand," Alex.

12. Probably the grass...
I'd guess that new sand isn't produced as quickly as grass, so once you finished the sand you could just go back and count up the new sand grains that had formed during the counting process. For the grass, however, by the time you got to the end, everything you'd counted would be dead and you'd have a whole new batch to count - the job wouldn't end.

So, even though there are probably far more sand grains than grass blades, you are more likely to be able to finish with the sand...

13. it depends-is creating those definitions included in the time estimate?
Because, you just gave them. But, they likely would't take that long a period of time.

15. it's a close contest
there is clearly more sand. BUT, practically, the grass would grow back while you were counting the rest of the grass. Far less new sand would be created, though I suppose that is debatable.
