That sums up my thoughts on guacamole. Go with the sour cream instead.

2. it's really easy to make
Edited on Mon Apr-17-06 02:47 PM by supernova
All you really have to do is mash it up with a fork.

2 Hass avacadoes
lime juice
fresh tomato (you can sub a table spoon or two of your fav FRESH salsa for these ingredients)
cilantro
1/2 an onion.

edit: there is a store bought version I like too. I can't remember the name, but you can find it in the grocery store with the refridgerated salad dressings in the produce section. It comes in small sealed pouches to keep it from turning brown.

6. That's it
about an equal ratio of avocado and salsa.

Cut all the way around the pit of the avocado, then twist and pull the halves apart. Stick the knife into the pit and pop it out. Use a pairing knife and cut the avocado while it is still in the skin -- make cuts the long way and then cross wise, scoop out with a spoon. Eyeball an equal amount of salsa. The lime juice is essential. I would add some salt and probably skip the cilantro (it doesn't bother me but plenty of people claim to hate cilantro).

It is far superior to store bought and even most restaurant guac because most of them add sour cream (!?) to the mix and store bought stuff has to do something crazy to keep the stuff from turning grey.

13. this is the way I make mine except
I also add a tablespoon or two of sour cream - makes it a tad more creamy

and also a couple of splashes of hot sauce (but I always use a fresh tomato)

Made a batch yesterday - cure was good with a couple of cold beers

mashing all together with a fork is all that is necessary

3. 2 med. avacados
1 small tomato
chop up some onion
some garlic (wee bit)
some lemon juice (or lime if you're one of those freaky weirdos who don't think lime is the most vile thing on earth :P)
some cilantro

Smoosh with fork until consistency you enjoy.

Inhale in 30 seconds.

4. trader joe's has a decent ready-made guac in the refrigerated area
otherwise, just get some ripe avocados, mash 'em up with some lemon juice, salt & pepper and cilantro. i spent years making fancier guac, but when it comes down to it, there's no better flavor combo than just the avocado and cilantro. :)

7. Don't over mash the avocado.
Leave them a little chunky.
Add finely chopped onion, fresh cilantro, a dab of garlic, a dash of lime juice (in the SW that's authetic), some chopped tomato and salt and pepper.
And then invite me to share because I love guacamole!!!

8. About the avocados .....

Be sure to buy the Hass variety. They are best when they are dark grey all the way around (no green) and when they have just a little bit of give when you squeeze them. Too much give when you squeeze and they are over ripe, if they are hard as a rock they aren't ripe yet and won't have any flavor. Be sure to add the lemon or lime juice when you prepare. It's not just for flavor. It keeps the guacamole from turning color too quickly.

I love the stuff. I could eat it every day.

19. My variation:
Edited on Mon Apr-17-06 04:01 PM by Shakespeare
Even my finicky stepdaughter inhales this stuff:

1 ripe Haas avocado (large)
1/4 cup minced red onion (must be red onion, and mince it as finely as you possibly can)
1/4 cup finely chopped tomatoes (seeds and pulp removed first)
1-2 finely minced garlic cloves
finely chopped pickled jalapeno slices, to taste (this is my "secret" ingredient - I use 6-7 slices)
kosher salt, to taste
juice of one lime

Chop up everything but the avocado - save that for last (leaves less time for it to oxidize on you). Cut the avocado(s) in half lengthwise, and use a spoon to scoop out. Use a fork to mash the avocado & mix with the other chopped ingredients, salt & add lime juice. Let sit in the refrigerator, covered, for an hour or two to let the flavors blend.

I'm one of those weird cilantro-hating freaks, so that never makes it into my guacamole, but feel free to add it to yours....

22. Whats worse is "American Guacamole"!
Mashed avocados mixed with either sour cream or mayo. Some taco shops had to offer this for "Murikans" and their watered down tastes.
Its just plain NASTY!

Mash avocados. Toss in some good picante until it's spicy enough for you. That's it.
