I love my Homework from College I need suggestions?

I have to create recipes and look up recipes which is not so bad as homework goes.

We have a final next week and guess what guys we will be drinking on School property because we have a wine and champagne taste testing going at the same time.

I can only hold about 4oz but I will be feeling good that day and my Groups theme is going to be Caribbean so I am making a cold avocado & mango salsa/guacamole type of thing that will go along with pita chips that will be enhanced with an essence that I made up.
My hot appetizer is going to be Crab Caribbean Puffs that will be placed in a Pate Choux shell.

I have to come up with one more appetizer that has a caribbean theme.


Any suggestions?

Sounds like a great final exam! I wish I could help you out with a recipe, but I don't know anything about this cuisine ... let us know what you come up with! The menu sounds yummy :-)

4. Coconut corn fritters w/ honey yogurt

Coconut Corn Fritters

1/4 c coconut milk
1 cinnamon stick
2 tbls unsalted butter
2 tbls sugar
2 cups fresh corn kernels
1/4 c corn meal
1 egg

Bring coconut milk and cinnamon stick to a boil over medium heat. Reduce heat and simmer about 5 minutes. Add butter and sugar and stir till butter is melted and sugar is dissolved. Remove from heat and steep for about 10 minutes. Remove and discard the cinnamon stick.
Puree 1 cup corn in food processor. Add flour, corn meal, egg and coconut milk mixture. Process about 10 seconds. Transfer to a bowl and stir in the remaining cup of corn. Cover and refrigerate for about 30 minutes.
Drop fritters (whatever size you choose.....larger for entree, smaller for app) into hot oil. Cook till golden brown. About 3 minutes or so.

Honey Yogurt
Combine:
8ozs Vanilla Yogurt
2 ozs Honey
Cinnamon to taste
