I supposed you might say that it's because the biggest stockyards in the country were once in Chicago, however, that is no longer the case and currently there are no stockyards in Chicago.

You might suggest it's because there is already a team named the 'Bulls', but that's got more to do with the Chicago Stock Exchange, The Chicago Merchantile Exchange and the Chicago Board Options Exchanges. I guess that 'Bulls' seemed a natural fit since there is already a team named the 'Bears'.

Not that I have anything against cows, they're delicious, but perhaps the 'Chicago Mob' might seem more fitting.
