How to get a cooking stain out of a "stainless" pan & a spice question

Yes, it's a scorch stain on 1/4 of a 12" pan, looking that rich mahogany translucent color. I already tried a metal polish. How about a boil in the old vinegar?

As for the spices, another great, intelligent DUer already taught me that the proper heating of olive oil is "when the little waves form" NOT smoking it. So up to now I have been spicing things up (chicken) raw. Heard somebody say on t.v. that some (all?) spices go in at the very end, after everything is actually done?

boiling a can of tomatoes in the stained pan - or is it tomato juice? Tomatoes, I think.
