My dinner tonight: "Les Halles" (NYC) quality!

T-bone steak cooked over lump charcoal and wet hickory

Garlic mashed potatoes with sauteed Vidalia onions (Potatoes Lyonnaise)

Spinach salad with Clemson Blue Cheese dressing

Mushroom sauce for steak and potatoes:
Butter
Mushrooms
Veal demi-glaze*
Chicken stock
Lemon juice
Diced shallots

Served with a Fat Bastard Shiraz. Absolutely wonderful! Just think what I will do when I get my new kitchen.

* Veal demi-glaze is the most important ingredient on my mis en place ("meeze") nowadays. I can make it, but I can also buy a very high quality veal demi-glaze frozen at the New York Butcher in Greenville, SC.

Tomorrow night: Calves liver and onions in the French peasant style, left-over potatoes Lyonnaise, quick-woked spinach in olive oil and lemon juice. Iced tea (I have to stay up for Dr. D's arrival at midnight!).

2. Sounds great...
and I think mushrooms are fungus (and can't get past that long enough to be able to eat them). You made them sounds delicious. I just had an egg sandwich for dinner. Last time it was fancy, I posted about it here. ;)

7. First, get the blue cheese.
Then mix and mash 1/3 Clemson Blue, 1/3 olive oil, and 1/3 balsamic vinegar. Or buy the ready-made Clemson Blue Cheese Salad Dressing and cut it to taste with olive oill and balsamic vinegar. Know what I mean, Vern?

Back to the dog. So sorry about your loss. He looks very regal.

I loved Anthony Bourdain's "Kitchen Confidential". I learned a lot about what NOT to order in a restaurant...
