Kickass pancake recipe!
And it's easy!

Sift 1 c. flour, 2 tsp. baking powder, and 1 tsp sugar into a mixing bowl. Add 1 beaten egg, 1 c. milk, stir, and add 1 tsp oil. stir until smooth. Cook on a hot griddle, flip when they bubble.

1. Sounds yummy
Try this - use brown sugar instead of white and add a little dribble of vanilla extract. :9

I LOVE pancakes!

Bad thing about 4 y/olds - I always end up having to leave my computer ASAP, then don't get back for awhile.

<sigh> Oh well, this should make up for it!

3. Have these eggs with your pancakes for the BEST breakfast ever...
this is a way of making scrambled eggs that's a little different.

3 eggs per person (6 for 2, it doesn't go far)

1.5 tbs of butter for every 3 eggs

In a good sized non-stick pan, melt the butter over medium heat. Break the eggs into a bowl and just loosely mix them up. No heavy whipping, please don't add anything to them; no water, no milk.

When butter is melted, add the eggs and turn the heat down to the lowest possible setting.

Now... using the back/bottom of a fork, stir.

Stir a lot. You don't have to stir fast, as much as really just moving the eggs back and forth around the heat. As the center heats and sets bits of the eggs, loosen it with the bottom of the fork and move it out of the way, bringing the lesser cooked bits to the center.

Stir a lot more. Try to use a constant attendance, don't let them sit and set.

Be patient. Keep stirring. At about the 20-25 minute point, they're setting up into a true scramble, let them set up a bit more for firmness, you don't want them too damp, and add a touch of salt, serve and enjoy.

Yeah, they take about a half hour, but it's SOOO worth not rushing it. Just keep stirring for the most moist, delish eggies you've ever had.

6. Here's something that my kids used to love. After you pour the
batter onto the griddle, sprinkle a few chopped nuts onto the uncooked side. The nuts get toasty while you brown the second side and they are delicious. You can also sprinkle the uncooked side with some finely chopped apple mixed with just a little sugar and cinnamon. Yummy!

10. Also, banana slices,
add a pinch of brown sugar just before you flip them! fuckin dee-lish ! They get all crunchy when the sugar melts.
Chopped pecans or walnuts also go great with the 'nanners.
