Mom's Latke Recipe - Rucky's Hanukkah Gift to DU:
4 Med Potatoes (bakers work best)
1/2 - 1 cup Matzo Meal (you'll see later)
Small onion (white or yellow)
1/2 tsp salt
1/4 tsp pepper
1 large egg
vegetable oil
flour for dusting
sour cream and/or applesauce for dippin'

Peel & grate the potatoes. Blot off water w/ paper towel. Dust them with flour & put them in a strainer w/ a bowl under it. Refrigerate for 1-2 hours. Dump excess liquid from bowl.
Grate the onion & blot/squeeze out the excess liquid. Water is the enemy of the latke.

Combine potatoes, w/ grated onion, salt, pepper & egg. mix til' egg beaten & blended. Add 1/2 cup matzo meal & mix in. If batter is runny, add more matzo meal (up to a cup).

Heat 1/4"-1/2" of hot oil in pan on medium-high. Drop in batter in glops of your desired size & cook until golden brown on each side 3-5 minutes. (Hey, this is mom's recipe - not scientific)

I like 'em kinda small 2-3" because they stay crispy in the middle without the edges getting burned.

Eat with sour cream for dinner, then with applesauce for dessert. Yum.

I know it's not traditional but hot sauce with the sour cream or the applesauce just makes it

5. Kugel recipe:
1) Make a lasagne.
2) Remove all the flavor.
3) Eat & wish you were having lasagne

potato kugel is a different story, but sadly, no recipe.

Now if you wanna make some cabbage rolls...

I spread the shredded potatoes between two dish towels and roll out the excess liquid.
