Green Chili heaven!
Found a stash of last year's Hatch frozen chilis in the freezer. Made rellenos.

Yowza!!! A taste of home. If there is anything better than green chili, I haven't found it yet.

I may have to hoarde some of them though with all the flooding in New Mexico . . .

that the flooding came after most of the harvest had been made.

I just ate, out of the crock pot ('cause I love it made that way), some more green chili stew.

I now eat green chilis with every meal. Hatch chilies. My health be damned!

I'll take this moment to say that I found out I have cancer. I won't go into detail further than that, and am burying this in a thread because I will not say anything more about it.

Only a god of some kind could have made green chilies!

2. No, green chiles are on the short list of foods for a desert island.
Can live without them but would prefer not to do so. We grow our own and the downside is that we haven't had some of the fine Hatch ones in years.

4. My favorite green chilis actually come from a different part of New Mexico
but Hatch are what I can get here and they are plenty good.

8. I went to School in Socorro New Mexico
In the fall people all over town would roast green chillies in turning grated drums. The sent of pinion pine roasted chillies seemed to fill the entire Rio Grand Valley. What a wonderful scent.

they put them in a big propane-fired rotating drum

This year, I'm going back to my old method of roasting them myself on the grill. I'll share some of that scent with my neighbors . . .

9. New Mexico has the best Mexican-style food anywhere
And I haven't seen the kind of food served in NM anywhere outside the state. I love the green chilis smothering everything.

I use green chilis a lot when I'm making my Mexican creations. Excellent stuff.

I need to get back to NM again, at least for a visit.
