I'm making a huge pot of chicken and dumplings and you're all invited

to dinner. Especially all you negative nellies that are feeling down about things today. There's nothing like a hot bowl of chicken soup to help heal the soul, and I've decided I want to do this for all of you today. So come, join me for dinner. We can sit together at the table, express our sorrows and hopes and hopefully leave for home feeling better.

P.S. homemade apple pie for dessert

34. It's my mother's recipe for Hungarian Cucumber Salad...
3 to 4 large cucumbers
1 teaspoon salt
1 cup of sour cream
1 tablespoon white vinegar
2 to 3 fresh garlic cloves (minced fine)
1/4 teaspoon hungarian paprika
1/2 teaspoon sugar (optional)

Preparation
Peel cucumbers and thinly slice (1/8 inch, the thinner the better)into disk shapes using a hand grader or food processor. Place sliced cucumbers in a bowl, add salt, cover and place in refrigerator for 8 hours. Stir occasionally. (note: This allows the bitterness to be removed from the cucumbers, so don't use the juice, the sour cream and vinegar supply plenty of liquid)

Remove cucumbers and squeeze out excess liquid. Discard this juice.

Blend sour cream, vinegar and minced garlic, then mix well with salt marinated cucumber slices. (Add sugar also if prefer a sweeter taste). Garnish top with paprika when ready to serve.


My 13 year old granddaughter loves me to bring this cucumber salad to family affairs. I always bring extra for her as this keeps well for several days if refrigerated.

42. cucumbers need picking too.
there'll be some on my table soon. I love Old European peasant recipes. Fried cabbage and noodles is another of my family favorites and don't get me started on beets. I can eat beets till my pee runs pink.. I know, it's gross and probably too much information.. but it's true.

in fact bring what ever or who ever you like. The more the merrier. We've just been spending too much time feeling bad lately and today I want to play mother and give people comfort. I just think we'll feel better if we do this.

there and bring some vanilla ice cream to go on top of our apple pie.

You know - some good Amaretto (sp) coffee would go good with that pie also.

There's real trick to making them. There either so light that they float out the window, or they sink to the bottom of the dish and create a tital wave.

Alas, I've never even attempted to make them. Left that job to my mother and aunt.

26. In my family we used eggs and flour
Ordinary all-purpose flour at that.

Mix eggs and flour while boiling the broth. We didn't specifically shape the dumplings, just mixed eggs and flour until the eggs were all incorporated into the flour. They formed lumps. Once the water is boiling, you add the dumplings s - l - o - w - l - y and stir. You can't add dumplings unless the water is boiling. My first attempt, I forgot this and ended up making paste.

You can also make noodles out of eggs and flour, but you'll also need some oil. (any kind will do, we usually used vegetable oil. Do not use the kind you have to melt down.)

Knead the oil, eggs, and flour into dough and roll it thin. Cut into strips. Boil in water for ten minutes or until they taste ready.

My family's recipes are heavy on "put some flour in with the eggs" and light on "add one cup of flour".

There is a trick. When I make noodles, sometimes I can get the oil, egg, flour combination just right and everything flows. But if I don't use enough oil and there's too much flour, it feels heavy and tastes heavy. I can't quantify it, my grandmother never wrote this recipe down. She made noodles with me several times before I got it right.

OK. That does it. Now I'm hungry.

30. Matzo Balls

2 eggs
4 tablespoons melted chicken fat or 4 tablespoons butter
1/3 cup cold water
1 teaspoon salt
1 cup matzo meal

Beat eggs, fat, water, and salt together.
Stir in matzo meal, adding just enough to make a stiff batter.
Chill 1 hr. Form into balls a little smaller than a ping pong ball and
cook for 30 min. in boiling soup or salted water.
Makes 18.

From my former boss' Jewish wife on Long Island.

NOTE: Matzo balls wouldn't be used with chicken & dumplings. They're better in chicken soup.

my son, my brothers and all of my nephews. My mother use to make the BEST chicken & dumplings that you ever tasted in your life (at least we all thought so). At ANY family gathering, we required her to bring chicken & dumplings. I always felt left out of the meal. By the time I would get around to getting my share, my brothers, my husband, my son and all of nephews (all of whom have appetites as big as they are) would have had their share (and then some) and I was left with the scrapings from the bottom of the pan. It was always a lot of fun. I certainly do miss that. She passed away this past April.

So, anyway, me and my family will be at your house in spirit. Thanks for the invite.

That's very kind of you. I never really minded scraping the bottom, though. It was always great fun watching all the boys pig out, and seeing the joy in my mother's face when they did.

25. Bisquick Dumplings
My mom used to have to cover them to keep them from floating up to the ceiling. I never knew how she did it until recently. I called her to ask her recipe and she said "Bisquick, silly!"

MMM damn now I think I'm gonna make some yardbird and dumplings today...

He used a biscuit recipe from a Betty Crocker cookbook, rolled it out as if to cut biscuits, then sliced it into rectangular pieces and dropped them in the stock. They are the comfort food I often crave when I am down or stressed. You could try that if you are adventurous. Flour the dough before you cut it and leave some of it on when you drop them in to thicken the stock. Yum!

basically biscuts is just milk flour and baking soda or powder(what makes them float) and a little salt

28. not a secrect... but thres a hard wa and an easy way depending on my
mood. I toss a chicken in a pot filled with water and a little salt (cause I'm not a big salt fan and it can always be added later). When the chicken is done, I take it out and let if cool so I can clean the skin and bones off the meat. I run the broth through the strainer to clarify it a little. Then add celery, onion maybe some parsley or a little dill and garlic even if you like (just chop and toss it in or saute it in a little butter first) put the chicken meat back in and a few mixed vegitables (carrots peas beans and corn) and bring to a boil. Mix up your dumplings, bisquick or jiffy mix. Recipe on the back.. drop them into boiling pot, cook uncovered for about 10/15 minutes then cover and cook another 10/15. Viola! chicken and dumplings.

My sister likes me to add egg noodles too but they tend to suck up all the juice, so I like to cook the noodles seperate and just pour broth over them.

The real easy way is to buy the low sodium chicken broth, toss in the chicken and veggies you like and bring to boil. Then do the same with the dumplings. My grandma used to use the Aunt Sue brand but I like my own broth (less salt).

experiment with it, you can't ruin it.

or just use bisquick or Jiffy mix. I use Jiffy, cause it's a minority owned company and less expensive. but if you really want to make them from scratch...

2c. flour
3 tsp baking powder
1 tsp salt
1/4 c shortning (oil)
3/4 c. milk

add milk last, mix.. they will be a little stiff and very sticky. drop by spoonfill into boiling soup
cook uncovered 10/15 minutes and then cook covered another 10/15. When you take the lid off the entire top of the pot should be filled with fluffy dumplings.

My husband and I are out to door knock for our outstanding Democratic State Representative.

Can we come for leftovers? Chicken and dumplings are a favorite!!! And I bet the conversation is stellar too. We will reciprocate with a nice big Dungeness Crab Bisque for you after Dems sweep in November how bout? Our apple trees are bumper this year, bet your pie is outstanding.

I sometimes have a little trouble with my pies.. but you're right, this one is particularly good. I put a lot of love in it for you folks. My husband used to rate my cooking by how much love I put in it. If he wasn't particularly crazy about how dinner turned out.. he would say.... baby, you didn't put enough love in it.
