4. As far as I can tell, there are 3 meats: mutton, horse, and beef,
and 4 ways to prepare them: boiling, frying, salting, and hanging to dry.

There is no way to mix and match that that doesn't come out WRONG in my book.

20. an interesting recipe from the site
recipe for jellied fish:

"800 g of fish, an onion, 1-2 laurel leaves, a carrot, 20 g of gelatin, salt and pepper to taste.

The scared fish is boiled with onion and carrot, salt and spice to madiness . . . ."



I wonder if a calm fish tastes the same as the scared one . . . .

22. I use the term "cuisine" broadly here
And yes, fermented mare milk doesn't sound so good.

Though it is probably used to wash down the dried, salted horsemeat. :hide:
