Favorite spinach substitute?

The more we can't get spinach, the more I want it.

I just steamed some chopped bok choy, and that was excellent. I drizzled some balsamic vinegar on it, and used a dab of light butter, salt and pepper.

Anyone else have spinach alternatives until this E. Coli thing is over, preferably one for a raw spinach salad?

1. If you can find it, try mache

(pronounced "mahsh"). It looks like a large four-leaf clover, tastes good, and is very nutritious.

2. Arugula for salads, I would say.

They've pulled all the bagged baby greens because they have spinach in them! Waaahhh!!!! :cry:

Raw, the way I like it best as well? Beh, I just add lots of things to my salad - cukes, tomatoes, red onions, bacon bits, hemp seeds, red pepper, shaved carrot, boiled egg, perhaps - to give the romaine some flavour. And lots of dressing.

Nothing beats a spinach salad with cranberries, pecans and toasted sesame dressing. I'm craving it now...x(
