I'm making fried chicken tonight
(please folks... let's not get into the cornflake flamewar)

I don't very often fry foods, but once in a while I get a craving for fried chicken and I won't by KFC.

Mashed taters, steamed broccoli.


Should I stop and get a pie for dessert?

Can't get enough fried chicken.

Love it with buttermilk and flower with spices. Mashed potatoes and milk gravy, green beans and a buttermilk biscut with butter.

Hot, cold, leftover I don't care.

Try a nice cobbler with some vanilla on top. LOL. Or a pie if you like. Either way its wonderful down home food. Enjoy it! I have a very easy cobbler recipe thats yummy. If you would like I can send it to you. :)

6. ok, please don't laugh..
I have never deep fried any food item. So, how do you fry fried chicken so it cooks through so there is no pink? Do you pre cook the chicken? Thanks in advance for answering my naive question, but like I said, I have never deep fried anything.

PS..corn flakes are good on baked chicken.

9. You Can Pre Cook It
at times we boil our chicken and then fry it. I don't fry frozen or really cold chicken. I let it warm to almost room temp while prepping other stuff. Put the heaviest pieces in first and then add the smaller pieces at a different time. It allows everything to cook at an even rate. If you over bread your chicken it will burn before the chicken is done. Coat it lightly and drop it into hot oil. That also makes a difference. I hope this helps! I am not a professional (obviously) and I am sure many other DU'ers have better advice. :) Just my two cents.

I have not tried the fried snickers or oreos et al...but I have to get my fried cheese whenever I go to a park. I know that rocks.

brown the chicken on each side for 5 minutes on 375, then turn the temp down to 350 and put the lid on it.

I double dip it. First egg and then flour with Lawry's Season Salt, lots of pepper and garlic powder. Repeat then drop into skillet with very hot oil, flame on high, heaviest/meatiest side of the piece down. Once it starts getting brown, turn it, lower the heat and cover. When that side is brown, turn it back over, uncover and return heat to high so it will crisp up again. Best in a cast iron skillet. You just kind of learn how long to leave it before turning, etc. by doing it. Experience is the best teacher.

I never knew how to do it well, either, until I moved down south and asked the experts. That's what they told me and it turned out great! Now my husband is vegetarian and I don't make it anymore. I crave it all the time!

My mom and my oma made the best fried chicken. Dark meat only. I guess that's why I'm so partial to dark meat on baked, fried, grilled....
I never tried to make my own-I usually pick up Popeye's. :yoiks:

15. if you have a vegetable garden
now is the perfect time to do fried green tomatoes. Since it's so late in the season, any new tomatoes won't have time enough to ripen so you can either slice them up, dip in egg, dredge through seasoned corn meal & fry them up, or put them into a paper bag and hope they ripen. If they ripen, they aren't great for eating in a salad, but they are perfect to use in a tomato sauce.

oh, and for the record, my kids LOVED cornflake crumb fried chicken..so no flaming here. :7

I am going to have to clear up the myth that there was a "real" chicken-n-cornflake flame war. There wasn't. No one on DU, including myself, gives a shit how anyone fries their chicken.

Personally, I think cornflakes make a fine breading. You can buy it pre-fab, which beats crunching up the flakes yourself. Or maybe use Wheaties. Or Special K. :-)

Now that I have that out of the way...

The story behind that mythical flame war was that it was just a stupid continuation of a primary war from GD. This proves that the primaries did not bring out the best in us at times, including myself especially. I regret participating in that continuation, and for whatever cosmic reason chicken-n-cornflakes played a part in it, I have no idea, but it DOES make me laugh in hindsight, as it should everyone.

The person involved in that "flame" war and I made peace shortly thereafter, with no problems since.

So enjoy your fried chicken, however you decide to make it! :hi:

I recommend a screen for your skillet if you have one. :-)

Our lives are so short, and they are apparently getting shorter by the moment, so it's important to enjoy what life has to offer, occassionally. Even if you are a health nut, it's good for your metabolism and immune system to take a break from healthy eating now and then.
