Mexican food tonight (recipes, anyone?)
Got the nachos ready to go (thanks to a quick Google search for the perfect recipe - yeah, I know they're easy to make).

Decided to do guacamole as well. So I did another search, and came up with this:

1. Guacamole's actually easy without a recipe
I just mix whatever proportion of avocado, tomatoes, onion, lime, cilantro and salt I have on hand.

4. I usually use all of the above plus ..........
finely chopped garlic and finely chopped jalapeno........ :thumbsup:

2. carne asada tacos
Marinate skirt steak in lime juice, a little olive oil, cilantro, salt & pepper. Grill on a HOT grill pan or outdoor grill (hopefully it's not cold where you are). Chop up and serve on soft, warm corn tortillas (two to a taco) with chopped tomatoes, onions, cilantro (and add a little jalapeño if you like). Deliciosó!

3. The One True Chimol

Cut up an onion (standard South Carolina Episcopal chop)

Cut up a tomato (same chop theology)

throw both in a bowl.

Add lime juice, garlic, salt, pepper, more garlic

Mix it up

Put it on everything you eat.

This is very flexible, you can add cilantro, mango, chile dulce (bell pepper) cucumber, radishes, whatever you feel like chopping up and throwing in.

6. Mole that isn't scary like SOteric's ;)

Get some chicken pieces and a jar of Dona Maria brand Mole.

Throw the chicken in some water with salt and pepper. Put it on the fire till the meat falls off the bones. Take the chicken out and lay it in a dish.

Put the chicken juice and the Dona Maria in the electric molcajete (blender) mix it all up, pour over chicken.

Make some rice with a little bit of Sazon Goya thrown in with some salt and a lump of butter.

Pour chicken and mole over the rice, put result in mouth.

7. OK.
Chicken chili verde.
Brown chicken pieces well in oil. Remove and throw in a chopped onion and several cloves of garlic. Saute until soft. Add the chicken back and cover with green chili. Simmer in green chili for an hour or so.

Spanish rice.
Saute about a cup of white rice in bacon fat until it starts to brown. Add a chopped onion and some garlic and saute briefly. Add chicken broth to cover and a small can of chopped tomatoes. Bring to a boil and then simmer til the rice is done.
