"Dover sole"? What the @#&%$ do I do with that?
Mrs. Robb called and is bringing home Dover Sole from "fresh fish day" at the market. What the heck... just fry it in butter, or somethin'?

...And no jokes about fresh fish day. This is an important day in the week for those of us who rely on aircraft for such things.

Wrap it all up and bake at 350 for about 20 minutes.

7. Heavenly Sole
Serves 6

2lbs skinless sole fillets
2 tbsp lemon juice
1/2 C grated Parmesan
1/4 C butter, softened
3 tbsp mayonaisse
3 tbsp chopped green onions
1/4 tsp salt
Dash Tabasco sauce

Place fillets in a single layer on a well-greased bake and serve platter, 16"x10". Brush fillets with lemon juice and let stand for
10 minutes. Combine remaining ingredients. Broil fillets about 4"
from source of heat for 6 to 8 minutes or until fillets flake easliy.
Remove from heat and spread with cheese mixture. Broil 2 to 3 minutes
longer or until lightly browned.

Cut into serving size pieces. Mix olive oil, dijon mustard in about equal amounts. If you have any of this: garlic, chives, something else I forgot, maybe capers. Put the fish in a pan or cookie sheet with foil under the fish. Put about a tablespoon of the oil/mustard/whatever else you can find under each piece of fish, and cover it with the same amount of the whatever stuff. Broil for about 5-6 minutes. Good stuff, and you are a lucky duck.

flip it over, another minute or 2, take it out, put some wine in the pan, let it cook down, pour that over the sole, squeeze lemon juice over that, make some rice, throw in a flew little slivered almonds and raisins, some butter, serve it with the sole.

You can also throw some mushrooms in when you put in the wine if you want.

12. REAL Dover sole?
That stuff's expensive.

Me, I just slice up a bunch of onions, cut the fish into chunks, put some oil in the frypan and saute.

There are many more exotic ways to deal with fish fillets if you want some work. Like, get some crabmeat and whatever you think goes good with crabmeat and roll the crabmeat up in the fillets. Stick a toothpick in there to hold it together and steam or bake the rollatines till done. Pour some white wine on them. Mix the stuffing up with oil and eggs, or just the yolks, to cook up a mayonnaise in there. Creamy and dreamy. A little paprika on top for color and snap isn't a bad idea.

No crabmeat? Not even canned? OK, rice and chopped veggies and almonds. Wild rice might be very nice.

What the hell, even Stovetop Stuffing would work, but real dover sole would just kind of shrivel up and hide behind the refrigerator if it saw that coming.
